Bacon-wrapped pork loin with: Mango coulis, buttered basil potato mash, vegetable ribbons, glazed baby apple
Ingredients (2 portions)
200g Pork loin
50g Streaky bacon
100 g Potatoes
30g175gTinned mango
30g Carrots
30g Baby marrow
30g Red pepper
20gOnions
2 Baby apples
20g Honey
40ml White wine
Basil
2 Pork crackling
60ml Gravy
Method
Trim the pork loin to remove the skin and the sinew
Season with oil, pepper and salt
Wrap the pork loin with streaky bacon
Grill it to seal
Finish it in the oven for 10 minutes
Fry onions in butter and add basil
Mix with mash potato
Glaze the baby apple in honey
Grill the vegetables to maintain the colours
To serve pipe the mash, slice the pork loin and serve with vegetable ribbons and a white wine flavoured mango coulis
