After all the December celebrations and decadent splurges, it is now time to give your body a break and get a little healthy. So, we decided to give you a delicious, easy and very healthy soup as the recipe of the month for January.
Spinach and watercress soup
30g spinach
30g watercress
Pinch salt
Pinch crushed black pepper
50mls fresh cream (optional – for a healthier option you can leave it out)
50g butter
50g flour
1 onion
5g pumpkin seeds
Vegetable stock
Method
- Shred the vegetable
- Cut the onion finely,
- In a sauce pan add butter and flour, stir with a wooden spoon till thoroughly cooked and add vegetable stock to a good dropping consistent
- On a separate pan blanch the watercress, onion and spinach very lightly and run in cold water to keep the colour, add stock and blend
- Mix together the white sauce and blended spinach & watercress add fresh cream and finish with pumpkin seeds and serve
A few facts as to why we should consume more spinach:
Spinach is low in fat and even lower in cholesterol, spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese.
